Prima Primavera

all vegies, light on the carbs

How I did it (serves one)

1/2 spaghetti squash micro waved the squash for 10 minutes.  I did not remove the seeds

until after I had finished the cooking, it is much easier to do it then..  After the squash is finished let it set for a minute.  The seed area will remove easily and with a fork you can comb out all the squash strands to be used as the base for your topping.

1/2 large sweet onion roughly chopped

1 tsp garlic ( or as much or little as you like)

asparagus (you can use broccoli or any vegetable/s that you wish)

olive oil for frying pan

spices (I used a tsp of balsamic vinegar, tomato basil dried spice, and a dash of Chef Pauls veal and pork spice.

Caramelize onions and garlic in the vinegar and add the spices.  I left the tops of the asparagus for the last few seconds and dropped them in so they would be crisp.

After the toppings were finished I dropped in a few almonds and put this atop the waiting squash.  Looked good and tastes great.  Yum, Yum
